Spektrum DX7 programming

I recently purchsed a Spektrum DX7 and am a little confused about certain things in the instructions. Firstly I seem unable to assign the 'gear' switch to select a mix, as per instructions (page 58). This option seems unavailable on my set. Also is it possible to raise both ailerons as spoilers using the full travel of the throttle stick? Up to now I've only managed to use half the travel, even when using an offset. Finally, the instructions mention spoilers (SPOI) on page 53. This option also seems unavailable.

I'm not familiar with the DX7, I have a DX6i.
Are you certain the gear switch can be used for mixing? The DX6i has a separate mixing switch, the gear switch is not for that, it's just an extra channel.
I've set up spoilers on my DX6i but using the flap switch, not the throttle stick. Sorry I can't offer any advice for you - maybe contacting Horizon Hobby UK support?

Gear switch available for some mixes

The gear switch is available on some mixes, but not others. Play with the different mixes, I know it can be done (I use the gear switch for a throttle cut on most of my programs).
