What is the difference between a 20C and 30C 2500mAh battery pack? How would I know which type of battery suits my particular type of motor? And does the ESC amp rating come into it also?

The C rating on li-po batteries lets you know how much current it's safe to draw from the pack, and you multiply the C rating by the capacity in amps. So, a 20C 2500mAh pack is good for 20x2.5 = 50Amps, and a 30C 2500mAh pack is good for 30x2.5 = 75Amps.
You need to know the amperage of the motor and the pack, and the ESC needs to have a higher rating than both. And of course, the battery pack voltage should not exceed the motor voltage.
Matching li-po, motor and ESC correctly is very important and quite complicated, a very good program to use for matching components to your plane is MotoCalc.
