Where to use high torque servos

I have been flying for a few years now, but still need advice! I have a Cap 232 80 inch, and would like information on where it is best to fit high torque servos, ie on rudder only or elevator or all round.

I'd say use them on all control surfaces, and get the best you can afford. Given the size of plane and the likely aerobatic maneuvers that it'll encounter, the servos need to be as strong as possible because there will be some high forces acting on the surfaces. High torque digital servos all round (ex. throttle) would be my choice for such a model ;-)
